David Elliott writes:
“Every single cell in your body uses fat in its construction. Fat is so important that, if we have to, we can make it in our livers – your brain is 60% fat – breast milk is 40% fat for a newborn, rising to more than 60% at around eighteen months. Does nature provide food for our babies with the intention of killing them off? Without sufficient fat in our bodies, we die.”

50 years ago scientists in the UK and the rest of Europe had isolated sugar as the most likely cause of heart disease because sugar was known to be corrosive, and to cause inflammation in the arteries. Scientists in the USA (a large sugar producer) argued that it was saturated fat in combination with sugar that was driving heart disease, and that sugar on its own was a completely harmless and healthy source of energy. Therefore it was fat that must be eliminated. It should however be said that at the time many distinguished American scientists were also arguing that the low-fat theory was badly flawed, and we were focussing on high-carb diets, using triglycerides thereby increasing the risk of heart disease. Those scientists did not get to speak out though because the United States Department of Agriculture (USDA) put its weight firmly behind the low-fat theory. The scientists who’d actually got it right were ignored, many had their research grants taken away. Only researchers who came up with the “right answers” received the big cheques and the shiny new laboratories.

The USDA spread the low-fat theory around the world. That’s all it ever was; a theory, an idea, never proven. The world took it on board. We no longer asked, was it sugar, or was it fat, because we now ‘knew’ that fat was the baddy, and so by inference sugar was good.

The food industry had the go ahead to remove dietary fat from our food, and because food without fat is tasteless they replaced it with sugar. As far as this expert is aware nobody has ever claimed that fat is fattening… because it isn’t. But the food industry has gone out of its way to have you believe it is. With advertising and packaging screaming out ‘low fat’, ‘reduced fat’, ‘fat free’; slender models eating sugar-laden yoghurt and declaring “I can’t believe it’s fat-free”. It’s little wonder that people have been brainwashed into being terrified of an important nutrient that has sustained us since we first walked on the planet.

The consequences of this are all around us. Rocketing rates of cancer (especially prostate cancer), heart disease, diabetes, auto-immune disease, neurological diseases, obesity….the list goes on and on.

Recently, research is now showing that sugar is bad for your health. That’s something you would not have heard as little as ten years ago.

The USA admitted in 2016, “We may have got it wrong on fats back in the seventies, you should now start to include some fat in your diet”. If you missed that, you can thank the BNF (British Nutrition Foundation).

It will be some time before the public is told the whole truth on fats by either governments or the health authorities; for the simple reason that there’s just not enough good food with good fats to go around anymore. Take fake-foods containing sugar and carcinogenic seed oils off the shelves and there’s not much left.
When the knowledge that the only truly healthy fats come from animals, dairy, olives, cream, eggs, meat etc., becomes public property the cost of these real foods will go through the roof.

No government wants to be in office when the fat hits the fan. Back in the seventies, the wrong macro-nutrient was given the blame and now we’re all paying the price.“
